ABOUT THE RMS DELAYED DISGORGEMENT
Picture a harmonious blend of barrel-fermented Pinot Noir and Chardonnay base wines from various vineyard sites, united over a decade ago in this very bottle.
The marriage of Pinot Noir and Chardonnay into a complex, seamlessly fruity delight is a patient process, particularly exemplified in the case of this RMS Sparkler which has reached its pinnacle after ten years!
After disgorging and a light dosage in the summer of 2023, we now offer this wine as a testament to Oregon’s ability to craft beautifully aged Méthode Champenoise sparkling, solidifying the Willamette Valley as the premier New World region for sparkling wines.
THE TRADITIONAL METHOD PROCESS
Also known as Méthode Champenoise, this labor-intensive process produces the finest Champagne and high-quality sparkling wines worldwide. The wine undergoes a secondary fermentation in the bottle, creating those signature small bubbles. The process starts with adding a liqueur de tirage (a wine solution of sugar and yeast) to a bottle of still wine. This triggers a second fermentation inside the bottle, producing carbon dioxide and lees, or spent yeast cells, which collect at the neck during the riddling process. After an extended period of time on lees—three years or more at ROCO—the bottles are disgorged, and the lees is replaced with dosage, a solution of wine and sugar that balances the wine and enhances the flavor profiles created by the natural fermentation process.
